Impressing Friends with a BBQ

BBQ squid is notoriously difficult to do right and if you are not very careful it can turn out rubbery and tasteless. This means that choosing to cook squid is the perfect way to impress your friends with a BBQ. Read on to discover an excellent BBQ squid recipe that is actually easier to execute than you might thing.

Ingredients

  • 600 grams of squid
  • 1 tablespoon of olive oil
  • 100 grams of rocket for the garnish
  • Lemon wedges that can be used to serve

For the Parsley, Chili and Garlic Sauce

  • 3 finely chopped red chilies
  • 4 tablespoons of olive oil
  • Juice of half a lemon
  • 2 tablespoon of chopped parsley
  • 2 crushed garlic cloves
  • Black pepper and salt to season

Get the fishmonger to thoroughly clean the squid for you and once you are in your home kitchen ,separate the tentacles of the squid from the body. Cut the body of the squid on one side of the squid so that you can open it easily. Score the inside of the squid lightly while taking care not to cut all the way through. Rinse the squid well and place it in a colander to dry.

Now it is time to mix your sauce ingredients in a bowl and season the squid. Toss it in some oil.

Preheat your BBQPreheat your BBQ until it is very hot. Put the squid tentacles on the BBQ and then place the squid bodies with the cut side down. It should take just one or two minutes for the squid to cook and you can tell that it is down when the edges start to curl up.

Remove the squid from the barbecue and garnish before serving. You can use fresh herbs to add a splash of color and a little extra flavor that is sure to satisfy.
